Makai ki meethi roti ~ Corn sweet bread
A punjabi bread made from corn meal. It generally served with sarsoon ka saag and chaati ki lassi. But I love to eat it sweetish along with a cup of tea.My mother used to make this makai ki sweet roti. I always loved the sweet taste of it. These are very easy to make and very nutritious. In Pakistan you can easily get makai flour from any shop.
Its easy for me to make it on my hands but I’m sharing the easiest recipe which any one can make.
Ingredients:
- 2 cups makki flour/maiz
- 1 cup jaggery or sugar
- 1 tbsp butter or ghee
- Pinch of salt
- Water as required
- Ghee for frying
Method:
Sieve maiz/makai flour add sugar. Add pinch of salt and 1 ghee. If you are using jaggery add jaggery in 1 cup of water, let it cook to dissolve and strain this as well. Mix it with flour, knead till the dough become soft and fine. Use more water if needed.
Note: Do not put all the water at once.
Take a small ball of dough. Place it on the top of aluminum foil or butter paper. Gently press it to make sure that all sides are evenly pressed not very thin, but thick like parathas. Do not worry about the cracks, there will be few cracks.
Put 1 tbsp ghee or butter on tawa, now gently remove the roti from foil without breaking it put it on the tawa and fry using 2 tbsp ghee on medium flame and when become crispy and golden place on paper towel.
Serve hot.
